Sophie's cuisine is based on macrobiotics. Although the word itself can be a bit scary, it is perhaps one of the most humane nutritional methods, which dates back to ancient experiences. Macrobiotics is not only nutrition, but also a lifestyle. George Ohsawa, a Japanese teacher, summarized this diet based on Zen Buddhist principles around 1920. After almost his entire family died of tuberculosis and doctors were unable to help him, he decided to reject Western understanding and medicine and go back to his roots in Japan, why the Japanese were/are the longest-living and healthiest people on earth, because a long life, even a full one, is not enough.
Everything in the world is based on duality. Everything is Yin and Yang, just like the ingredients themselves, in order to balance our bodies, it is important to eat a balanced, personalized diet. It doesn't matter how much Yin and Yang there is in us, in our environment and in our daily lives.
Today we live in a very Yang world. Our biggest challenge is rush, conformity and stress. We can keep this in balance with the right foods. It is important that these foods are natural, additive-free, seasonal, and grown around us, because this way they will be full of the right amount of nutrients and energy. This way we can keep our vibration high and avoid most diseases.

Breakfast at the Butterfly House
When you check in with us, it's important to know that we start every morning with this menu:
- Mizo soup
- Rice porridge sweet or savory
- Whole grain bread, homemade jam/homemade vegetable cream/cold-pressed pumpkin seed oil
This breakfast is very important for cleansing.
Lunches and Dinners
In the spirit of Macrobiotics, we serve 3 courses for both lunch and dinner. These are primarily dishes containing fish or a small amount of animal protein.
If you have gluten or other special food sensitivities, please let us know in advance. We use many different types of seeds, so it is important for us to know if you are allergic to seeds!
